Flavorful Cooking on a Budget

My name is Bea, I am a down to earth type of person, one who cooks good wholesome food for my own family. I have worked in the food business, whether fine dining, local family restaurants or catering for my friends. Do I ever make a fancy dish for my family? Of course I do. But to be honest, just plain great tasting recipes are my stock in trade in the kitchen. I love to cook. I had dreams of trying out for MasterChef to hear Gordon Ramsay yell at me. LOL

However reality is that I live in constant pain from a chronic autoimmune illness, fibromyalgia, plus a few other lovely pain inducing illnesses. So there is no way I would ever be able to stand in a kitchen cooking for Gordon Ramsey and guests to be yelled at. It is honestly all I can do to stand longer than 20 minutes to be able to cook a meal. So these are recipes that are quick, and you can take a sit down, to catch your breath break while making them, if they take longer than 20 minutes.

It has been a rough weather week across the country this week with many storms. I have made mostly soups and stews this week. My granddaughter asked me to put in her favorite soup for you this week. Potato soup. It is a simple tasty soup, that has several ways to make it, if you read in the bottom of the recipe you will find several variations on the ingredients. However this will be the version given with what I consider to be the most flavorful. I totally understand if you can’t afford some of the ingredients, however, there are substitutions listed in the bottom of the recipe.
